Blueberry protein muffins

Dry ingredients

1 cup of whole wheat flour

1 cup of Drink Nature Blueberry Protein

1 cup of quick-cooking oats
-
3 tbsp of mixed grains (hemp, flax, camelina, chia, pumpkin, sunflower…)

2 tsp baking powder
- ½ tsp baking soda
Wet ingredients
-
2 eggs
-
½ cup of maple syrup
-
⅓ cup of avocado oil
-
1 cup of milk or plant-based drink of your choice
- 1 cup of fresh or frozen blueberries
Instructions :
- Preheat the oven to 180°C (350°F).
- In a large bowl, mix together all the dry ingredients: flour, protein powder, oat flakes, grain mix, baking powder and baking soda.
- In another bowl, whisk together the eggs, maple syrup, avocado oil, and milk.
- Incorporate the wet ingredients into the dry ingredients and mix well until a homogeneous dough is obtained (avoid overmixing to prevent the dough from becoming too dense).
- Gently add the blueberries to the batter.
- Divide the batter into greased muffin tins and fill three-quarters full.
- Bake for approximately 20 to 25 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool on a wire rack before enjoying.
👉 This recipe makes approximately 12 muffins.
